High Protein Pancakes
This sounds like a strange combination, but these 'pancakes' are absolutely delicious, and a great
way to add some protein to your first meal of the day. Drizzle on a bit of reduced-sugar maple syrup or top with a
smear of low-sugar preserves, add a piece of fruit on the side, and you'll be feeling great all morning! Be sure to

INGREDIENTS
-3 egg whites
-1/2 cup lowfat or fat free cottage cheese
-1/3 cup (or 1 single-serve packet) oatmeal (dry)

Preparation:
Place all ingredients in a blender (for smooth pancakes) or mix together with a fork (if you like your
pancakes heartier). Pour batter onto a preheated (medium heat) griddle sprayed with no-stick cooking spray.
Cook until golden brown and set; flip over and cook until the other side is golden brown and set. Serves 1.
