Green Bean Salad
Low in calories and high in taste and nutrition, this fresh green bean salad
is a delicious way to get in a serving (or two!) of veggies. Served room temperature or
chilled, it's a perfect side dish for lunch or dinner. Be sure to check back from time to time for new recipes, and

INGREDIENTS
-1 pound fresh green beans
-2 ripe tomatoes
-1/4 cup lite Italian salad dressing*

*I prefer Bernstein's Light Fantastic 'Cheese Fantastico!' or Kraft's 'Light Done Right!'.
Preparation:
Trim the ends from the green beans and rinse them well; steam 5 minutes or until crisp-tender. While they are
steaming, rinse tomatoes and cut into bite-sized chunks. Allow green beans to cool slightly, then toss together
with tomatoes and Italian dressing. Serve warm or chill to serve later. Serves 8.
