Chicken Noodle Patties
This easy and delicious main course is perfect for lunch or dinner. Add a salad or fresh fruit for

INGREDIENTS
-1 (3 oz.) package Ramen noodles, any flavor
-1 (12.5 oz) can chicken breast packed in water
-1 cup shredded or very finely chopped vegetables*
-3 egg whites
-2 TBS flour
-no-stick cooking spray

*My family likes these with onions and carrots, but experiment with different veggies to find the flavor you like
best. Just be sure to shred or chop the vegetables very small.
Preparation:
Break the noodles into 4 sections; boil in 2 cups of water for 3 minutes then drain. Place noodles, seasoning packet,
drained chicken, veggies, egg whites and flour in a medium bowl; mix thoroughly. Heat a large non-stick skillet over
medium-high heat and spray with cooking spray. Divide and shape the noodle mixture into 4 patties and fry 2-3 minutes per
side until egg is set and patties are light golden brown. Serves 4.
