Tomato Basil Scramble
This quick and easy egg dish is perfect for breakfast or lunch. Fresh basil is a must for best flavor. Be sure to check back from time to time for new recipes, and

INGREDIENTS
-3 egg whites
-1 small potato
-1 small tomato
-4 fresh basil leaves
-2 TBS crumbled Feta cheese
-no-stick cooking spray

Preparation:
Scrub potato and poke several times with a fork; bake in microwave for 3 minutes or until tender. Dice potato. Spray a small non-stick skillet with cooking spray
and heat over medium-high. Add diced potato, spray again with cooking spray and cook, stirring occasionally, until golden brown. Add egg whites to pan and reduce heat
to medium low and cover with a lid. While you're waiting for the egg to set, dice tomato and thinly slice basil. Remove lid from pan and stir potato-egg mixture. Add tomato, basil
and Feta to the pan and stir to heat thoroughly; finish cooking until eggs are set. Serves 1.
